Chai Tea often referred to as Masala Chai originates from India and is steeped in cultural heritage. The word "chai" simply means "tea" in Hindi but this beverage is anything but ordinary.
It's a mix of flavours that is mixing black tea with a blend of spices that is including cinnamon or cardamom and cloves with ginger, and black peppercorns. Each sip makes you feel all warm and snuggly on the inside which is perfect for cold weather drinking.
The Art of Chai Making
It can take some experimenting to make your perfect cup of chai that works with the flavours you prefer. Try using darjeeling or assam tea as your base and mix and match the spices until you find something you like.
Then comes the mix of spices. Feel free to experiment with the ratios to suit your taste but don't skimp on the spices because they are the heart and soul of Chai Tea!

The Ultimate Chai Tea Recipe

Ingredients:
- Two cups water
- Four cloves
- Two cinnamon sticks
- Two cups whole milk (or any milk of your choice)
- Two tbsp loose black tea leaves (or 4 tea bags)
- Four green cardamom pods, crushed
- 1-inch piece of fresh ginger, sliced
- Four black peppercorns
- Two tbsp brown sugar
Instructions:
- In a big saucepan just add water with crushed cardamom pods, cloves and cinnamon sticks, sliced ginger and black peppercorns. Bring it to a simmer for about 5 minutes, allowing the spices to get into the water.
- Add the black tea leaves or tea bags and continue to simmer for another 5 minutes.
- Then you can pour in the milk and bring the mixture to a brief boil. Keep an eye on it to prevent it from spilling over the top!
- Reduce the heat and let it simmer for an additional 5 minutes which helps in allowing the flavours to mix together well.
- Next, you should sweeten with brown sugar and keep stirring until it dissolves. Adjust the sweetness to your preference.
- Last you should strain the Chai Tea into cups or teapots and enjoy the smells that fills the air.
